I'M NO EXPERT
I've spent enough time binge-watching those expert baking shows to know that I am not one of those expert bakers at all. But when my daughter's 10th birthday party came around, I needed to figure out how to become one quickly.
GLUTEN FREE CAKE
My daughter has a gluten allergy which can make parties a little tricky. I wanted to make sure she could have a "normal" birthday with all the trimmings, including a delicious birthday cake. So, I called up a local bakery 3 months in advance, put in an order for her cake, and didn't think about it again. I felt like the queen of advance planning! Little did I know, I would soon be knocked off my throne after getting a call from the bakery two weeks before my daughter's big day. It turned out that their bakery was moving to a bigger location, which meant that they weren't able to complete cake orders for the next 2 months. Great for them, terrible for my kid and me.
NOW WHAT?
We live in a pretty small town with a limited number of bakeries. Let alone bakeries that are accommodating to dietary restrictions. The best option I could think of was buying a massive amount of candy and hoping for the best. While it would have been easier, I couldn't stand the thought of my kid's disappointed face.
TIME TO CONQUER MY FEAR
It was then that I had to decide: would I let my fear of kitchen mishaps keep me from giving my daughter the sweetest birthday possible? Or would I face my fears and become the kind of supermom who basically runs a whole bakery on the side? I knew what I had to do.
TO THE RESCUE
I made my way over to the internet to find the recipes and tools I would need to make the perfect gluten-free birthday cake. I found the right recipe with no trouble, but the right tools were much harder to find. I almost lost hope until I stumbled upon Cakes of Eden. She helped me every step of the way. When she wasn't trying to lick the spoon, she was a master with the turntable, spinning our cake to frosted perfection. I've got to say, the look of pride on her face when she saw the finished product made me glad that the original order fell through.

On the day of my daughter's party, everything went off without a hitch! All the guests had fun, we had a cake, and people couldn't go a moment without asking where I got it.
